Have you tried switching cheese manufacturers*? It might not be the cheese itself, but some preservative or additive.
* I'm sure that's NOT the right word.
#2 I'm sure it is cheese manufacture. You don't grow cheese even though that's what happens. Pretentious places are calling themselves "creameries" now, instead dairy/cheese farms but it is still manufacturing.
I will try your suggestion r_f but I think it is something in the cheese.
It's not just stilton. A runny French blue (the name of which I forget) had me scratching through the night.
I once met a lady at a dinner party who said she gets very ill if she eats blue cheeses.
