As I understand it, the video game Okami is actually about this story. It is a very beautifully designed game, but I have not played it, so I can't speak for how interesting or fun it is.

No retellings of the myth that I know of, but the deity herself makes an appearance in The Nightingale by Kara Dalkey. But that's kind of a spoiler, but not enough to ruin a fantastic read.

Kara Dalkey's The Nightingale (published in the Fairy Tale Series) is tagged with Amaterasu (already mentioned by guyalice), as is Miyamoto Musashi's The book of the five rings and Tomoe Gozenm the first book in Jessica Amanda Salmonson's Tomoe Gozen series.

I have not read any of these books, though, so I can't say to what extent Amaterasu material has been reworked in these. I'm sorry I can't be of any more help.

The Book of the Five Rings is a non-fiction treatise on military strategy rather than a retelling of anything.

Amaterasu: Return of the Sun is a graphic novel that looks to be promising, though. (Yay! I can balance out my bad news with some potentially good news!)
